Sa Premsa is one of the last of the great cellers — wine warehouses turned dining halls — left in the centre of Palma, and it makes no concessions: monumental barrels along the walls, paper over the tables, and the food the island has eaten for generations.
Tumbet, the layered potato, aubergine and pepper dish, is the opening move; roast suckling pig or arròs de matances follow it. Portions are large and the service is fast. Hours and booking arrangements publish once verified.
