The Vallon des Auffes is a pocket harbour under the arches of the Corniche, and Fonfon has been at the back of it since the 1950s, cooking fish landed a few metres from the door. The service is a ceremony: broth first, then the fish cut at the table, croutons and rouille alongside.
It asks for time and a booking, and the dish itself is usually ordered in advance. Reach it by taxi or the bus along the Corniche — this is a long-call plan, not a stop between two others.
