Miramar is one of the founding signatories of the Charte de la Bouillabaisse Marseillaise, which is the closest thing the dish has to a legal definition: named rockfish, a stated method, no industrial shortcuts. That is the reason to come here rather than to the nearest terrace with a photograph outside.
The room looks onto the Quai du Port, which also makes it the version of the ritual that fits a port call without a taxi in either direction. It is a full lunch, not a quick one.
